Umbria has been producing olive oil for more than 2,000 years, and in 1998 it became the first region in Italy to earn DOP (Protected Designation of Origin) status for its extra virgin olive oil. This medium-intensity Umbrian oil is harvested at optimum ripeness, giving it a naturally high polyphenol (antioxidant) count, a fruity body, a peppery finish, and low acidity.
Because it's harvested and pressed with such care, this is best used as a finishing oil rather than a workhorse cooking oil, drizzled on at the end of cooking so its peppery, fruit-forward character comes through instead of cooking off. It's a great introduction to true DOP-region Italian olive oil for anyone used to supermarket blends.
