Marsh Hen Mill Stone Ground Blue Grits are made from heirloom blue corn grown on a local family farm on Edisto Island, SC and stone ground on restored antique mills that preserve the natural oils and flavor of the grain. The blue color fades slightly when cooked, but the flavor stays: slightly floral, nuttier than yellow corn, and complex in a way that makes you want to eat them plain with just a good olive oil and salt.
Stone grinding on antique mills is what separates Marsh Hen Mill from commercial producers. The slow, cool grinding process keeps the germ and oils intact, producing a grits with real character rather than a neutral starch base.
