Dr. Pete’s Olive Oil Cake Mix
1C finely ground pistachios
3 eggs
1-1/4C milk
1C Butter Infused Olive Oil from Lowcountry Olive Oil
Mix, bake, cool according to package directions.
While cooling, whip together the icing:
½ cup Meyer Lemon Olive Oil from Lowcountry Olive Oil
1 ½ cups powdered sugar (whisked until smooth)
Optional: top with crushed pistachios and a lemon twist!
